Coffee Overview: Anaerobic Washed coffee is coffee that has been fermented in a pressurized, sealed environment without oxygen, which produces a unique flavor profile. The process can be used on coffee cherries or coffee that has been de-pulped in the mucilage.
Flavor: Anaerobic coffee has a distinct flavor profile that's different from natural or honey processed coffee. Some say that anaerobic coffee can have flavors like wine, cinnamon, or pineapple.
Process: The coffee is placed in sealed barrels with water and left to ferment for 48 to 72 hours. The fermentation process releases gasses that push oxygen out of the barrel through a one-way valve.
